Here at Seatofourpants, we believe that a key to understanding a county is to know its food. We also acknowledge that it may be hard for some of our readers to score fresh stinging nettle leaves, so here’s a dessert recipe that may be of interest:
100 grams melted butter
½ dl shredded cocos flakes
½ dl oats
2 tbsp sugar
1 ½ dl wheat flour
dash of vanilla extract
wild raspberries
Mix all ingredients well and mold into a pie form. Add the berries and sprinkle lightly with sugar and corn starch (this will make the pie less moist). Bake for 15-20 minutes on 225 degrees C (425 F), until the edge turns golden brown. Sprinkle with powdered sugar and serve with vanilla sauce.
Yummy!
