Northern Indian Cooking Class – Recipe 1

    Aloo Gobhi (Serves 6-7 people)

    1 Head Cauliflower

    4 Medium Potatoes

    4 Tbsp Vegetable oil

    ½ Tsp Cumin seeds

    2 Tsp Fresh Ginger, chopped

    2 Tsp Garlic, chopped

    ¼ Tsp Turmeric powder

    ¼ Tsp Red Chili powder

    1 Tsp Coriander Powder

    1 Tsp Salt

½ Tsp Garam Masala (a spice packet you should be able to find in your grocery store)

    ¼ Glass Plain Water

    Chili (optional)

    1. Chop veggies into bite-size pieces

    2. Heat oil in a wok

    3. Add cumin seeds. The seeds will crack open if the oil is hot enough

    4. Add garlic and ginger when the cumin seeds have turned brown

    5. Optional: add chopped chili if you want it spicy (but the chili powder already makes it plenty spicy, so be cautious with this one

    6. Cook for one minute while stirring ingredients together

    7. Add turmeric powder and red chili powder

    8. Add coriander powder and salt

    9. Add garam masala

    10. Mix and cook for 1 minute

    11. Add water, turn the heat down and cover

    12. Cook on low for 20 minutes, or until the veggies are cooked (the potato should slice through easily)

    13. That’s it – easy and delicious!

You know the term, “fly by the seat of your pants?” Well, that's been our philosophy for most of our adult lives – before and after meeting, falling in love and marrying. We're now taking that idea on a 14 month round-the-world trip. Follow us as we share the good, the bad and the downright nasty of life on the road.
